Phillip, our manager and food and beverage director here at the Gage Hotel, shared with us his most popular drink recipe that keeps visitors raving and craving, even weeks after their stay. Needless to say, this West Texan knows a thing or two about making an amazing and authentic margarita—and we are lucky enough to have him share his secret with us. Happy Friday y’all!
The 5 simple ingredients are as follows:
1.5 ounces *Pura Vida Silver tequila
2 ounces freshly squeezed lime juice
3/4 ounces of Cointreau
Splash of simple syrup
1/2 ounces of prickly pear juice (1/2prickly pear juice, and 1/2 prickly pear purée mix)
After combining the above, add the mixture to a shaker with ice, and shake vigorously. Salt the rim of the glass (or not—whichever you prefer!), and add ice. Then, strain the margarita into your glass and garnish with lime wedge or fruit of your choice.
Voila! You have your self a delicious homemade Prickly Pear Margarita, courtesy of the Gage Hotel. Enjoy!

The White Buffalo Paloma:
2 ounces Tres Generaciones Silver Tequila
4 ounces Grapefruit juice
3 ounces Topo Chico (sparkling water)
2 Lime wedges squeezed
Fill Glass with tequila, Grapefruit juice, Topo Chico and the squeezed lime wedges
Phillip Moellering is one of the most beloved faces you will nearly always see at the White Buffalo Bar. He is the Gage Hotel’s manager, food and beverage director, and also happens to be the best darn bartender in West Texas. We’ve coaxed him into sharing another one of his legendary recipes with us. If y’all like his Prickly Pear Margarita then you have to try this delicious Michelada. It’s the perfect drink to fling you into spring. Gage Michelada Recipe:
5 ounces Gage bloody Mary mix (recipe below)
Beer of your choice (Preferably Mexican Beer)
Salt Rim of glass
Fill with ice
Pour bloody mary mix in glass
Top with beer of choice
Garnish with pickled green bean, olive, and jalapeno
Gage Bloody Mary Mix:
36 ounces tomato juice
1 bottle clamato juice
3 tbsp. caps of Worcestershire sauce
1 tbsp. caps of tabasco
2 tbsp. celery salt
2 tbsp. black pepper
1 tbsp. horseradish
2 oz. lemon juice
1 tbsp. kosher salt
Note: Bloody Mary Recipe makes a gallon. Cut down accordingly.

Our legendary White Buffalo Bar is, well, legendary…. But our White Buffalo Bison Burger at our White Buffalo Bar is epic. It’s so good we figured we would dedicate a whole post to it and thanks to Winston Wanders we have photos that do this delicious and juicy burger some justice.
Served on a soft bun and topped with melted cheddar- jack cheese, chipotle aioli, sautéed mushrooms and onions, the White Buffalo Bar Bison Burger is a Gage Hotel staple and arguably one of the best burgers in Far West Texas. Complete with a side of fresh tomatoes, onions, pickles, jalapenos and piping hot fries, the bison burger is worth the trip to Marathon and is one meal you won’t soon forget.
